Sherried Consomme With Avocado

3qts Chicken stock       2 egg whites, beaten       2 small avocados, peeled and diced

Remove fat from the top of chicken broth.  Add beaten egg whites, slowly bring up to boiling.  Strain through a cloth.  Add ¾ c. dry sherry.  Ladle consommé over diced avocado which has been divided among the cups.

Crown Rib Roast of Pork

7-8lb. pork loin- center cut              salt and pepper to taste

Form a circle of two portions of pork ribs by tying them together with a string or cord.  Salt and pepper the roast.  Place roast in shallow pan, fat side up, ina 350 degree preheated oven.  Allow 35 minutes per pound, basting occasionally.  When half done, reverse roast so rib tips point upwatds and allow it to finish cooking.  To serve, place on platter.  Put paper frills around each rib bone.  Garnish with watercress and crab apples.  Frills can be made with gold or colored foil: For each frill, cut a rectangle of foil 3 ½ inches wide and 4 inches long.  Fold lengthwise and cut 1 ½ inch slashes about every quarter inch down the folded edge.  Bend into a circle and tape loose ends together.

Tapas Tree

For the tree: Cut one piece of Styrofoam the size of a flowerpot, or other silver urn type pot.  Secure the Styrofoam in pot, flush with the top of the pot.  Firmly insert a 14inch dowel rod into the Styrofoam.  Place the second 6 inch block or ball of Styrofoam on top of the dowel, deep enough for it to rest firmly.  Take curly parsley and working in small bunches, attch greenery to Styrofoam with florist pins.  Immediately before serving, attach marinated olives to toothpicks and place on the parsley tree.
