Plan the Ultimate Labor Day No-Work Picnic!

Nothing says the arrival of the end of summer more clearly than Labor Day. It’s one of our last chances to celebrate in the warm sunshine before the season begins to turn and cooler temperatures roll in. Don’t miss this opportunity to bask in the sun one last time and celebrate the working force of this great country! Having a day off of work means you should be relaxing, so long hours of party preparation wouldn’t be an ideal way to start your long weekend.

Take a load off and plan an easy peasy Labor Day picnic. Try this picnic menu for no-fuss menu prep!

1. Cabbage Coleslaw – Chop 1/2 head of white cabbage and 1/2 head of purple cabbage in your food processor pulsing lightly to achieve a chopped but not fine result. Pour into large mixing bowl and add 1 cup mayo, 1/2 cup Crushed Pineapple, 1 tbs. Vinegar, and a sprinkle of salt and pepper. Cover and refrigerate overnight.

2. Pulled Pork Sandwiches – Place a two pound Pork Loin into your crock pot with 1 can of root beer, 1 cup of barbecue sauce, 1/2 an onion sliced in strips, and a sprinkle of salt and pepper. Cover and cook on low all night. Set your crock pot to start cooking at bedtime and allow approximately 8 hours to cook on low (heat). In the morning, turn off the crock pot and remove the loin to a cutting board. Slice into thirds. Then with two forks, begin pulling in opposite directions, “shredding” the pork. Return to the crock pot with its juices and onions. Serve warmed buns alongside the crock pot and a dish of extra barbecue sauce.

3. Ice Cream Sandwiches – Take a gallon of your favorite flavor ice cream out of the freezer and allow to thaw until it becomes semi-soft and workable. With two of your favorite cookies, place a scoop of ice cream onto one side of the cookie sandwich and with a butter knife smooth out. You may want to add chopped nuts or chopped candy pieces here. Top with the other side of the sandwich and wrap in wax paper tightly. Return to freezer. Pull the sandwiches out of the freezer five minutes before you are ready to serve and allow to sit at room temperature just until they begin to soften.
